French Fried Chicken

Ingredients:

l 1 whole white onion, peeled, cut into quarters

l 1 head garlic, cleaned

l 1 kg chicken, skinless, washed

l 2 tbsp everyday seasoning

l 1 tsp paprika

l A pinch of pepper

l 1 tsp garlic and chilli spices

l 1 tsp dried pimento seeds

l 1 tsp mixed spice

l 1 tsp hot pepper sauce

l 1 tsp mixed herbs

l 1 cup cooking oil

l 1 tsp olive oil

For the Flour:

l 1 tsp everyday seasoning

l 1 cup cooking flour

l 1 tsp paprika

l A pinch of pepper

l 1/2 tsp dried chilli

l 1 tsp dried herbs

For the Egg Wash

l 1 cup cooking flour

l 6 eggs

l 1 tsp everyday seasoning

l 1 tsp dried paprika

l 1 tsp sugar

l 1 tsp chilli sauce

l 1 tsp hot pepper sauce






Method:

l Season the flour with paprika, pepper, chilli, herbs and everyday seasoning, then stir.

l Season the chicken with everyday seasoning, paprika, pepper, garlic and chilli, dried pimento seeds, mixed spice, hot pepper sauce, and mixed herbs. Rub up seasonings on the chicken. This can be covered and used on the next day.

l For the egg wash, pour milk into a large bowl, then add eggs. Add seasonings to the egg wash and whisk.

l Heat skillet then add oil.


l Once oil is heated, add the onion and cloves of garlic to enhance the oil’s flavour.

l Meanwhile, dip pieces of chicken one at at time into the egg wash then flour it (shake off excessive flour to avoid a mess from the counter to the pot), after which you put it into the frying pan. After the first batch is in, turn down the stove to avoid burns. Have it fried for 10- 15 minutes. Repeat the process until each chicken pieces are fried.

l Serve with rice and enjoy.

Serving Size: 4-5 persons

Chef tips:

You can add pepper to the oil so the chicken can have a spicy flavor. You can add egg wash to the seasoned chicken for faster results. You can also add onions to the oil for amazing results.
